Grilled Shrimp and Peach Skewers
Georgia is known for its fine Georgia peaches and the wonderful flavor that they add to many southern food dishes. You’d be surprised to what southerners will add a peach to. Many traditional southern food dishes have been inspired by Georgians’ love for their scrumptious peaches. To add one more to the list that you might be making in your mind is grilled shrimp and peach skewers. They’re awesome!
Grilled Shrimp and Peach Skewers
What you’ll need:
· 1 lb peeled and deveined large shrimp
· 4 tbs of olive oil
· juice of 2 fresh squeezed limes
· 2 tbs of vinegar
· 1 tbs of Splenda or sugar
· ½ tsp of ground red pepper
· 1 clove of garlic minced
· 1 large red bell pepper, bite size slices
· 1 red onion, bite size slices
· 3 peaches, peeled and sliced into bite size slices
Rinse shrimp and pat dry with paper towels. In medium sized mixing bowl add olive oil, lime juice, vinegar, Splenda, ground red pepper, and minced garlic. Mix well. Place shrimp into the mixture and set aside. Place a slice of bell pepper, red onion, peach, and shrimp to skewers alternating until skewers are full. Grill skewers over medium heat until shrimp are cooked thoroughly. Enjoy!
